Pre-Garden Salsa

Doesn't this look good? It is! Melanie Walker gave permission to me to post this recipe. She states that this is the best combination of flavors that she has ever had in a salsa and that it tastes fresh even though it is not made with fresh tomatoes. So we can make this salsa when our gardens are not yet producing!

*Note: This salsa is unbelievably good with the addition of two diced avocados mixed in just before serving.
*Makes about 3 cups

One Minute Salsa
1/2 small red onion
1/2 cup fresh cilantro
1/4 cup drained jarred pickled jalapenos
2 Tablespoons lime juice
2 garlic cloves, peeled
1/2 teaspoon salt
1 (28 oz) can diced tomatoes, drained

In the bowl of a food processor, pulse the onion, cilantro, jalapenos, lime juice, garlic and salt until coarsely chopped.
Add the drained tomatoes and pulse just until combined. Don't over process in this step if you want your salsa to remain chunky--just give it a few 1-second pulses. Place your salsa in a fine mesh strainer or sieve and drain briefly. Transfer to a bowl and serve. Enjoy!
