By now, the middle of February, my New Year's Resolutions involving exercise, are a dim memory--sad, but true. I do however, try to choose healthy snacks and make healthy meals year round. It is very interesting to read in my new favorite magazine (second to the Ensign,of course!), the health tips that they come up with.
In the last issue one of the tips they included was to make your own almond butter. They labeled it the "Smartest Snack Ever" when paired with apples and/or celery. It is easy to make and the protein-rich almonds are good for you, in moderation. Here's how you make your own almond butter:
Toast a cup of almonds in a 350 degree oven for about 15 minutes. You will be able to smell them when they are just barely toasted. Process them in a blender or food processor until fairly smooth, adding a drizzle of honey and a pinch of salt. Serve with apple slices or crisp pieces of celery.
